Maria is not your typical Italian restaurant, and Chef Giovanni Cucullo has creative fun in his kitchen. This entrée features gnocchi made with ricotta that are as light as clouds but somehow stand up to the luscious oxtail ragù that doesn’t skimp on the tender cut or flavor. It’s just as delicious (maybe better?) when reheated the next day.
